2007 Chenin Blanc - Paso Robles - $16.00
Vineyard Source: Red Cedar Vineyards, Shandon, CA
Red Cedar Vineyard is our source for both our Chenin Blanc and our Petite Sirah.  Farmed meticulously by Cal Poly graduate Ryan Randall, Red Cedar produces a wide range of grape varietals.  Our favorites on the ranch are the Old Vine Petite Sirah, planted in 1952 by the Peck family and Chenin Blanc planted on the far western end of the ranch.  Ryan specifically farms a small 1.5 acre block for 22Hundred Cellars on the western tip of the 2500 acre ranch.

Winemaking: Whole cluster pressed and barrel fermented in 60 gallon French barrels.  Aged on its lees for 6 months and stirred every two weeks to increase mouth feel.  The final wine was blended with 5% Chardonnay to increase the aromatic complexity.

Tasting notes:  Fresh summertime wine with bright acidity that showcases flavors of citrus and stone fruit.  The 2007 Chenin is a very food friendly wine that can pair well with a mix of seafood, poultry and greens.

2007
2007 Chardonnay - Arroyo Seco, Monterey County - $20.00
Vineyard Source:  Cobblestone Vineyards, Greenfield, CA
Cobblestone Vineyards is located in the heart of the Arroyo Seco appellation.  The vineyard gets its name because of the large river stones or “Greenfield potatoes” that are mixed in with the fertile ground.  

Winemaking:  This unique chardonnay is made of 100% Chardonnay clone 809.  Clone 809 is a new French chardonnay clone that was specifically selected because of its muscat/musque characteristics.   To preserve the bright muscat aromatics, we whole cluster press directly to a stainless steel tank for fermentation and aging.  We fermented the wine cold for over 25 days until dry.  The wine was not put through malolactic fermentation, but it was circulated monthly with its lees to soften the mouthfeel.

Tasting notes:  The heavy floral aromatics might trick your senses to thinking you are drinking viognier or gewurtztaminer, but on the palate it is 100% chardonnay.  The wine has a full mouthfeel that finishes long and smooth.  Enjoy with a variety of foods.

2006 Centerfold - Paso Robles - $18.00
Red Blended Wine - 40% Mourvedre, 40% Syrah, 20% Grenache

Winemaking: The Centerfold was fermented and made in small lots from various vineyards across Paso Robles. Punched down twice daily, each lot was gently pressed and aged in a mix of French and Eastern European barrels, approximately 50% new oak. The wine was blended upon completion on malolactic fermentation to give the wine eight months to integrate and develop.

Tasting notes: Cherry, and raspberry flavors come forward along with a hint of cola. The smooth tannins and mouth feel make the Centerfold complementary to a wide range of foods from pizza to barbeque.

2006 Petite Sirah - Red Cedar Vineyards, Paso Robles -$28.00

Red Cedar Vineyard is our source for both our Chenin Blanc and our Petite Sirah. Farmed meticulously by Cal Poly graduate Ryan Randall, Red Cedar produces a wide range of grape varietals. Our favorite on the ranch is the Old Vine Petite Sirah, planted in 1952. We feel very fortunate to have access to this high demanded fruit.

Winemaking: The fruit was gently destemmed and fermented in small lots that were punched down twice daily. Upon pressing, the wine was aged for 10 months in 100% Eastern European barrels of which 75% were new. Only four barrels of this wine were produced.

Tasting notes: A mix of cherry cola and dr. pepper are framed with this full flavored, big body wine. The wine’s long tannnis lead to a long memorable finish. Enjoy this wine with rich foods such as lamb, beef or game.
